Why are some dates yellow?
Happily for us, there are many different varieties! Perhaps you are wondering: Why are some dates yellow? You’re in the right place! At Dattes Ajwa, we explain where yellow dates come from!
We can enjoy them in many ways: as fruit, as molasses, or in a smoothie. Or in dishes prepared in the kitchen, savory (in a tagine) or sweet (in makrout, for example).
They come in two forms: fresh and dried. They are mainly imported fromAlgeria or Tunisia, where most are produced.

Why do yellow dates have this color?
- An unusual color
No suspense at Dattes Ajwa… If you are wondering why some dates are yellow on the market stalls, it is simply because they are fresh.
The dried dates you are probably familiar with are brown or even black, like delicious Ajwa dates, for example. But before they have finished ripening, these little fleshy fruits are yellow.
As surprising as it may seem, they have neither the same flavor nor the same texture as ripe dates. In fact, the dates yellow in color and growing in bunches look like tiny lemons and are hard and not very sweet.
- Ripening fresh dates
Fresh dates are not always easy to eat. You may also find that their less-sweet flavor does not appeal to you as much as dried dates. But do not worry: avoiding waste is very easy! How? Simply by letting your dates ripen.
It couldn’t be simpler. All you need is time and patience. Once you have a few ripe dates, put them in the refrigerator with the fresh dates. Keeping them together will allow your yellow dates to ripenslowly.
Alternatively, you can put them in the freezer before eating them.
Either way, we recommend giving these delicious natural treats a try!
